IS ANYONE ELSE fighting off a cold out there? I don't know if it's just because it's the winter and we have a 15 month old who is frequently in the church nursery or having playdates with other kids (who are always sick) but I swear our family has gone from virus to virus since November. Since I am pregnant and couldn't take any cold/sinus relief even if I wanted to I have been bringing back some of my throat and voice concoctions that I used to use regularly to soothe my symptoms when I was in university singing opera all the time. This is one of my favourites, it's best hot/warm but I have also had it cold and it does the trick! [amd-yrecipe-recipe:5]

THAI CHICKEN PIZZA

Thai Chicken Pizza

IN THIS HOUSE we love pizza. We make it weekly, usually on Fridays. It is one of the husband's favourite foods and I love to experiment with different toppings and flavours. This Thai chicken pizza is a result of that. It is easy to make and so delicious, not to mention it cures a craving for both Thai and pizza at the same time #winning!

Ingredients

1 ball pizza dough
1 jar President's Choice "Memories of Szechuan" peanut satay sauce
1 chicken breast, cut into 1" cubes
1 ball pizza mozzarella, grated
1 carrot, grated
2 scallions thinly sliced
1 handful roasted peanuts, roughly chopped
1 handful bean sprouts
1 handful cilantro, roughly chopped

Directions

Get your oven really hot, like to 500 degrees. We love our Pizza Stone to make the best pizzas - throw the stone in the oven while you're preheating!

Cook your chicken cubes in a splash of oil until seared and then add 1/2 cup satay sauce and continue cooking until cooked through.

Flour your surface and roll out your dough.

Put your dough on your hot pizza stone, spread a healthy layer of satay sauce on your pizza as your base, then add chicken, cheese and carrots.

Cook in oven for 10 minutes or so, until the crust is golden and the cheese is melted.

Garnish with scallions, peanuts, bean sprouts and cilantro.

Enjoy!

 

MOMO'S BOLOGNESE: QUICK, EASY AND DELICIOUS

I AM A sucker for a good pasta dish. One of my favourite pasta dishes is bolognese, the thick meaty sauce that sticks to the noodles and is perfect for dipping baguette in after you're done, can it be beat?! I looked through all my Italian cookbooks and found no recipes for pasta bolognese and all the good recipes I found online called for letting it cook for like 3 hours, which is time I did not have, so I decided to make one up for an evening in with my mom. (she also loves bolognese, the apple doesn't fall far from the tree!). Some bolognese need to cook for hours to get a delicious flavour but I found that one hour sufficed to get bold and delicious flavours in this dish. This pasta is arguably even more delicious as leftovers the next day and is a great way to sneak some veg into your kids, Finny loved it!

NO SWEETS NOVEMBER RECAP

Processed with VSCOcam with 4 preset A MONTH AGO I made a commitment to cut out candy and sweets from my diet for one month in an effort to get back into some good healthy habits. I don't know if it's because I am pregnant or what but it was so much harder than I thought it would be. I often do little cleanses like this and don't struggle with them but by the end of the month I had most definitely changed the "no refined sugar" bit to mean "no candy and chocolate". With a brunch date with my hubs and a trip to Montréal, it was almost impossible to not indulge in the occasional baked good.

I did notice that I often crave sugar first thing in the morning (read: chocolate for breakfast) and right before bed. So I started making smoothies in the morning and finishing the night off with apple slices or a clementine.

I feel like I gained a lot more self-control this month with eliminating candy and chocolate. I had way more energy and was able to stick to my goals of working out four times a week. It also reminded me that every time I go to put something in my mouth it is nourishing my baby and is something that I will have to work my butt off to lose post baby. This is definitely helpful perspective for me as we head into the biggest month of sweets! On that note, I'm off to bake Christmas goodies with my Grandma and Aunt today. ** I should add that the last two days of the month we had friends in town and I definitely broke early, indulging in some reese's peanut butter cups and reese's pieces. No shame here, they were delicious.

I HAVE BEEN making these power balls for at least 5 years now. The recipe has grown with me as my needs changed or wanted to mix up the flavours but the base has always remained the same. I bring these over for friends when they have a baby for them to have a quick and filling snack during the blur of the first few weeks. My one friend even joked that these saved her pregnancy and her marriage from her "hangry" moments. I can definitely relate. I eat one before my morning workouts to get a quick bite in me without making me too full, and I will typically have another throughout the day as a snack to get me through the afternoons when things are in full-swing and I am on the go with my little man!

The recipe is very much to taste and you can adjust the amounts of ingredients as you wish.

I HAVE BEEN making these power balls for at least 5 years now. The recipe has grown with me as my needs changed or wanted to mix up the flavours but the base has always remained the same. I bring these over for friends when they have a baby for them to have a quick and filling snack during the blur of the first few weeks. My one friend even joked that these saved her pregnancy and her marriage from her "hangry" moments. I can definitely relate. I eat one before my morning workouts to get a quick bite in me without making me too full, and I will typically have another throughout the day as a snack to get me through the afternoons when things are in full-swing and I am on the go with my little man!

The recipe is very much to taste and you can adjust the amounts of ingredients as you wish. Since I am doing a month without sweets I omitted the syrup all together and used a little extra peanut butter to compensate for the lack of moisture and they turned out great.

MOMO'S BEEF AND BARLEY STEW

HAS ANYONE ELSE been all about the stews and soups this fall season? I can't seem to get enough of them! There is something to be said for coming in from hours of walking around in the perfectly crisp fall air to a big bowl of soup with some bread and butter. Bread is a non-negotiable with soup. We go through almost a baguette a day and I have been making my Gramma's tea biscuits regularly. I love that Finny loves to eat soup with me and I can know he is getting a ton of vegetables every time he eats a bowl of. This soup was particularly good and once the meat is browned it is pretty mindless. Next time I might even make it in our crockpot!  To make it in crockpot simply dredge the beef in flour, s+p and sear it, then add all the rest of the ingredients to the crockpot. Set it for 6-8 hours and enjoy! [amd-yrecipe-recipe:2]
